Defined as revenue resulting from exchange for a product (F&B, service) for value (money).
Sales
Refers to the total value of expressed in dollar term for instant in any given period.
Total Sales
Refers to the amount of charged each customer purchasing one unit of a particular item. It can be a single meal or entire meal.
Sales Price
Determine by adding individual sales to determine a total and then dividing that total by the number of individual sales.
Average Sale
Determined by dividing the total number of covers for a given period by some other number such as hour of operation, day of operation or number of servers.
Average Covers
Term used to describe one diner regardless of the quantity of good the person consumes.
Cover
Refers to the total number of menu item sold in a given time period.
Total Number sold
Number of seats occupied during a given period divided by the number of seats available.
Seat turnover
Term used to describe the relative quantity sold of any menu item compared to other items in the same category.
Sales Mix
Determines how much your restaurant earns for any given dish.
Cost Percentage
