List the steps of retrogradation

A

1) There are more and more associations between polymers
(amylose double helices) than the water.
2) Double helixes aggregate into crystals (more ordered structure)
3) Starch (re) becomes semi-crystalline and the gel shrinks
4) Syneresis occurs: the expulsion (or weeping) of liquid from a gel
