Protein and fat Flashcards
What type of nutrient is protein?
macronutrient
What is protein made from?
amino acids
How many amino acids are needed in the diet?
8 essential amino acids - children require 10
What is the function of protein?
growth and repair of muscles and a secondary energy source
what are the sources of protein?
meat, fish, eggs, milk, cheese, insects
soya, nuts, seeds, pulses, mycoprotein(quorn), TVP(texturised vegetable protein)
What are HBV proteins?
High biological value proteins - they contain all 8 essential amino acids
What are LBV proteins?
Low Biological Value proteins - they don’t contain all 8 essential amino acids
What is protein complementation?
LBV proteins being eaten together to provide all 8 essential amino acids e.g. beans on toast, nut butter on toast, lentil dahl
What is excess protein used for?
Energy
What can protein deficincies result in?
Stunted growth,
kwashiorkor
What type of nutrient is fat?
macronutrient
What is fat made up of?
fatty acids and glycerol
What are the two types of fat?
saturated or unsaturated fat
What is the function of fat?
provides concentrated energy
source of vitamin A,D,E,K
provides protection for major organs
component of hormones
Sources of saturated fat are:
butter, lard, cream, hard cheese, meat pies, coconut and palm oil
