What are intrinsic attributes?
Physical product characteristics that can be measured objectively:
- Sensory attributes (flavour, texture)
- Health attributes (nutritional/health promoting values)
- Safety
What are extrinsic quality attributes?
How the food is produced.
- Production attributes (relates to consumer interest in production systems, like animal welfare)
- Convenience attributes
What’s the difference between quality experience and quality expectation?
Quality experience is exclusively related to intrinsic attributes. Quality expectation is also related to extrinsic attributes.
What is quality control?
A static control of products at pre-determined moments in the production chain.
What is quality assurance?
The dynamic adaption that focuses on understanding and predicting quality change over the entire food production chain.
Out of which two parts does HACCP consist out of?
- A hazard analysis (HA). Aimed at detecting microbial, physical or chemical contamination.
- Identifying and organizing important control measures, Critical Control Points (CCP). These points are set at production links where hazards are found.
What does QACCP do?
It controls all other quality parameters important in the food production chain, and can be used to standardize all batches of production.
What is chain reversal?
The movement in time when the type of products was no longer caused by the availability of raw materials and the producer but by the demand of the consumer.
