What is wort?
A sugar-rich liquid from malted grain
What is the cereal grain of choice for most beers?
Barley
Describe the process of malting barley
Barley steeped in water for ~2 days to promote germination.
Once it sprouts to ~inch tall, the enzyme amylase is produced, converting starchy carbs to fermentable sugars.
“Green Malt” is then roasted with hot air in a kiln to desired style
What two fermentable sugars are produced during the malting process of barley?
Dextrin
Maltose
Describe the mashing process in beer production
The malt is ground or cracked and then combined with hot water in a mash tun.
Process takes 1-2 hours
Converts and extracts sugars and turns into sugar- color- and flavor-rich wort.
What does boiling the wort accomplish in beer production?
Stabilizes and sterilizes the brew.
Darkens color
Causes excess water to evaporate
What is the next step after mashing in beer production?
Wort is moved to a copper kettle where it is boiled with the addition of hops
What is a top-fermenting yeast and a bottom-fermenting yeast?
Top-fermenting yeast: Saccharomyces Cerevisiae
Bottom-fermenting yeast: Saccaromyces Pastorianus
