Now let’s take a closer look at the more specific attributes and functions of lavender.
Research suggests that lavender
has the potential to reduce pain and inflammation, support sleep, and help with mood, anxiety, and depression. While also having the ability to kill harmful viruses and bacteria.
The common way to use lavender today is in the form of an essential oil, especially in the aromatherapy business. However, in the case of this research, the flower buds and the extract will be used

Lavender takes action in the body by introducing necessary antioxidants and reducing the number of free radicals. Due to normal metabolic processes or external factors such as UV rays, cigarette smoking, air pollution, and medication, free radicals are developed within the body, which can be a threat due to their ability to damage normal cell structure.
When free radicals outnumber antioxidants, which are those that have the ability to scavenge or stabilize free radicals, oxidative stress occurs, leading to various diseases.
Fortunately, Lavenders antioxidant properties help counteract this stress by supplying needed antioxidants, restoring balance crucial for proper bodily function.

Figure 1 shows the ways lavender is currently being used within the industry, from crop to harvest through processing to the final product. The most known lavender infused products include your soaps, shampoos, and fragrances, but what I have found is that if you Google “Top uses for lavender in 2024”, one of the top websites is titled “Lavender is 2024’s new food trend”. Therefore, we can infer that there is a gap in the market and room for lavenders use as a culinary ingredient as consumers shift their focus to products with health benefits

The origin of the doughnut dates back as far as the 1800’s and is still a staple confectionery snack today. According to a survey of 1,000 Americans , 96% liked the donuts. Furthermore, consumer demand for gluten-free products has increased over the past decade. The increasing intolerance towards gluten containing products and the incidence of celiac disease is what drives the markets growth. According to multiple research papers, up to 83% of Americans who have celiac disease have not been diagnosed or have been misdiagnosed. However, experts estimate about 2 million people in the United States have celiac disease and about 1% of people around the world have celiac disease. With this in mind, the global market for gluten-free products is expected to rise in value due to rising consumer awareness of gluten intolerance.
