Knee joint of a hog

Cured and smoked cheek meat of large hogs.

Dry and hard ready to eat thin sliced ham
What is salt pork?
Fat back / clear plate that has been cured in salt
What is a suckling pig?
4-6 pigs that are roasted whole.
What are variety meats?
The liver, brains, &pig tails used in preparation of sausages.
