Continuous phase: sugar, baking powder and egg white dissolved in water
Dispersed in continuous phase: Gluten and starch granules (from flour), butter, air bubbles emulsified with egg yolk
What is in the continuous phase and what is in the dispersed phase in bread dough made from: flour, water, salt and yeast?
Continuous phase: developed gluten with water, which has salt dissolved in it
Dispersed in continuous phase: Starch granules (from flour), bubbles of air, yest cells
What are the phases in a sponge?
A sponge has 2 continuous phases. One is air and the other is a solid. In the case of bread and cakes it is an elastic solid made of gelatinised starch.
