How do you make pasta?
A
400g flour
8 egg yolks
Rub together flour and bit by bit egg making bread crumbs, add rest of egg and bind together making lump of dough. Knead and work it, to develop the gluten in the flour. Stop when pasta is smooth and silky instead of rough and floury. Chill pasta for 30min before use.
