Prem: Sort grapes, cold soak, post-fermentation maceration, aged in small oak barriques with some of finest chateaus putting wine into new casks
AOC: use all grapes, no cold soaking, no post-fermentation maceration, not likely to see any oak
Grand Vin: best wine with leftover grapes sold to negotiants or used in 2d or 3d label wine; most blended in spring following a vintage although some kept separate until aging complete
White Winemaking: Premium vs Lower End
Premium: Pessac-Leognan fermented and matured in new oak barrels and have a richness and concentrated nutty flavor overlying fruits, lees, MLF sometimes
Lower End: Fermented in temp controlled inert vessel with minimal further aging but some show toasty hints of oak, fresh and fruity

M body
Ripe red and black fruit, sometimes cedar from oak
Cheapest can be lighter in body and more astringent tannins
Vin de Garage
Full body
Increasingly ripe wines made in tiny quantities from small plots of land with no expense spared in the vineyard or winery
