A

Starch binds to active site of the enzyme
As the shape of the active site and substrate are complementary
So bonds between starch molecules are broken to produce smaller molecules (sugars/maltose)

A

Iodine is not yellow brown as starch has not been broken down
At 5 Celsius amylases has low energy
So fewer enzyme substrate collisions
At 80 Celsius the amylase has been denatured
So starch is no longer complementary so can no longer bind and fit
