what is an oil
oils are liquids, fats are solids
triglyceride
unbranched carbon chains 4-28 carbons in length with an acid group at one end, chains may be saturated or unsaturated ie contain one or several C=C double bonds
melting point increases as the carbon chain legth increases
melting point decreases as the number of doble bonds increases, effect of unsaturation on melting point is much greater than that of chain lenth
stability decreases as the nu,ber of double bonds increases
liquid oils contain prodominantly unsaturated fatty acids
solid fats contain mostly saturated fatty acids or a mixture of both
lipids with a larger proportion of unsaturated fatty acids are more susceptible to thermal and oxidative breakdown
