What we are trying to find is the individual! We aren’t trying to look at things as the collective. 2 different individuals have 2 different ways in which they handle food.

We look at the link between health and disease (Science). Deals with how we ingest, digest, absorb, transport, and excrete food.
Example: Difference between digestion of steak and a protein shake (same protein amount)

Vital for growth and maintenance
What are the three characteristics needed to be an essential nutrient?
- Has a biological function
- Omission results in decline of function
