Pure expression of excellence in blending; while the vineyard sources are quite ordinary, the results are excellent. Stainless steel and concrete vats only. Double cold-settling of the must (promotes bright, intensely fruity wines). Colder cellars than most in Champagne (retards the second fermentation). All hand-riddled.

Bollinger in Aÿ; used for VVF The vineyards were never grafted post-phylloxera, and are replanted via provignage. They are also planted to 30,000 vines per hectare (as opposed to the normal 7,000).

Wines are fermented and aged in oak. Reserve wines are kept in magnums, bottled with sugar to keep 1.5 atmospheres of pressure in the bottle, protecting the freshness of the wine.
What contributes to the argued bottle variation in Grande Année and R.D.?
Natural cork for the secondary fermentation, and disgorgement a la volée.

Harvest dates are mandated by the government. The vineyard ripens a week early because of the severe pruning on the en foule vines.
