White wine specialty from the island of Santorini. This wine is made from min 75% Assyrtiko plus Athiri and Aidani harvest during the night time and then fermented whole cluster. Generally the resulting wine is a bit higher in alcohol and they are aged in barrel for a min of 3 months by law but often times a bit longer
