The goal is to find varietals that complement each
other and produce a blend that tastes better than
the sum of its parts.
How would you define our signature East Coast
Roast:
We roast to the point that creates the optimal amount of body while maintaining varietal clarity and character. In the spectrum of roast color, it is just beyond a Full City Roast but not as dark as a French Roast
What happens as you roast coffee darker?
As you roast darker, acidity and varietal characteristics diminish while the body increases.
Which of our coffees is a dark roast?
Crispy Hippie is a dark roast Mexican bean and the Black & Tan blend is our dark roast Mexican with a medium roast Sumatran.

50% dark roast Mexican and 50% East Coast Roast Sumatran. This is a bi-chromatic blend of dark roast smoky-earthy Mexican and rich, full -bodied
Sumatran. Lots of body, low acidity.

From the great Narino coffee growing region in Colombia, expertly grown and harvested by selecting the very largest ‘Supremo’ beans, this coffee is a buttery
and balanced single-origin coffee. It is the base of our house blend.

T his single-origin Rainforest Alliance certified bean from Mexico is a dense bean that is uniquely suited to take on the heat of a darker roast. It is full-bodied,
rich and savory, perfect for coffee drinkers who do not care for the bright or acidic notes in their coffee.

This single-origin bean is bright a floral aroma and lemony-acidity. It has high acidity and a light body. This coffee makes up part of our House Blend.

A robust blend with winey acidity from the Tanzanian Peaberry and spicy richness from the Papua New Guinea (PNG). Full body and high or bright acidity.
What coffees would you recommend to a customer looking for a light roast, even though we do not roast any of our coffees light?
Grumpy Monkey & the Morning Glory Blend, because these both have higher acidity and brightness which is found in many lighter roast coffees.
