A

They need to be stable, noncorrosive, and safe to use. It must be provided and available to employees. There are many types of cleaners. Like detergents, degreasers, and abrasive cleaners. Make sure to work with suppliers. Follow the instructions. Avoid incorrect usage.

How can you sanitize items?

A

You can soak them in hot water. The water must be 171F or 77C and soak for 30 seconds. Or run them through a high temperature dishwasher. You can use chemical solutions instead as well.

What are the three common types of chemical sanitizers?

A

Chlorine, iodine, and quats. You could use detergent sanitizer blends, using it once to clean and another to sanitize. It is regulated by state and federal EPAs. It must be available at all times.

A

How can you make chlorine sanitizer work?

A

If you use water temperature that is over 100F or 35C. pH has to be 10 or lower. Water hardness has to meet the manufacturer’s recommendation. The sanitizer concentration has to be 50-99 ppm and needs to be in contact for 7 seconds or greater. Lower temperatures would have lower pH.

A

The water temperature should be 75F or 24C. The water pH is the manufacturer’s recommendation. The water hardness should be 500 ppm or lower. The sanitizer concentration will also depend on the manufacturer’s recommendation. The contact time is greater than 30 seconds.
