Cleaning and Sanitizing
What does cleaning do?
Removes dirt and other substances. Things you can see.
What does sanitizing do?
Reducing pathogens on the surface so it stays at safe levels.
How should you pick and use cleaners?
They need to be stable, noncorrosive, and safe to use. It must be provided and available to employees. There are many types of cleaners. Like detergents, degreasers, and abrasive cleaners. Make sure to work with suppliers. Follow the instructions. Avoid incorrect usage.
How can you sanitize items?
You can soak them in hot water. The water must be 171F or 77C and soak for 30 seconds. Or run them through a high temperature dishwasher. You can use chemical solutions instead as well.
What are the three common types of chemical sanitizers?
Chlorine, iodine, and quats. You could use detergent sanitizer blends, using it once to clean and another to sanitize. It is regulated by state and federal EPAs. It must be available at all times.
What makes a sanitizer solution affective?
The temperature of the water, using the correct amount of sanitizer, and the amount of time an object is in contact with the sanitizer. So, concentration, temperature, contact time, water hardness, and pH.
What can help you prevent making accidents when creating a chemical solution?
Use a test kit that is usually available from the chemical manufacturer or supplier. It is measured in ppm.
How long should items be in contact with a sanitizer solution in order for it to work correctly?
Contact time depends on a few different factors.
How can you make chlorine sanitizer work?
If you use water temperature that is over 100F or 35C. pH has to be 10 or lower. Water hardness has to meet the manufacturer’s recommendation. The sanitizer concentration has to be 50-99 ppm and needs to be in contact for 7 seconds or greater. Lower temperatures would have lower pH.
How can you make quaternary ammonium compounds “quats” sanitizer work?
The water temperature should be 75F or 24C. The water pH is the manufacturer’s recommendation. The water hardness should be 500 ppm or lower. The sanitizer concentration will also depend on the manufacturer’s recommendation. The contact time is greater than 30 seconds.
How can you make iodine sanitizer work?
The water temperature must be 68F or 20C. The water pH should be 5 or lower. The water hardness should meet the manufacturer’s recommendations. The sanitizer concentration must be between 12.5 to 25 ppm. The contact time must be 30 seconds.
How should surfaces that don’t touch food be cleaned?
By just cleaning and rinsing.
How should surfaces that touch food be cleaned?
It should be cleaned, rinsed, and sanitized.
What are the five steps to cleaning and sanitizing a surface?
First scrape and remove residue. Then wash the surface. Then rinse it. After that, sanitize it. Lastly, just let it air-dry.
How does dishwashing machines work?
They use hot water or chemical solutions. It has to be the correct temperature. The final rinse must be 180F or 82C. Stationary rack single temperature machines should be 165F or 74C.
What three things should you focus on when developing a cleaning program?
Create a master cleaning schedule. Train the staff to follow it. Then monitor the program to make sure it works.
