The server of liquor is responsible for the clients and liable for them

Factors that Affect a persons BAC (6)
- size: more muscular; not amt of body fat
- rate of consumption: faster someone consumes the faster they become intoxicated
- strength of drink: not every drink is one standard drink; carbonation forces alcohol into blood stream
- food: eating makes difference
- gender: women have less muscle mass and less of a digestive enzyme that breaks down alcohol
- drug use: hard to tell but skews intox rate
Behavioral Cues of Intoxication (JIRC 4)
- j- loss of judgement: poor decisions
- I- loss of inhibitions: Being more talkative, more friendly
- r- slowed reactions: cant catch, slurred speech
- c- poor coordination: dropping things, spilling drinks
Intoxication Measure (150 lb man)
2 per hour: BAC .05 - release of inhibitions
3 per hour: BAC .08 - DWI limit
4 per hour: BAC .10 - loss of coordination
8 per hour: BAC .20 - loss of emotional control
12 per hour: BAC .30 - “walking blackout”
14: BAC .35 - coma
16: .40+ - dead
How to Cut Someone Off
- Say no
- Suggest food or soda
- Suggest they drink more water before more drinks
- Saying management doesn’t let you
- Calling a bouncer
Standard Drink
12 oz Beer = 5oz wine = 1.5 oz liquor
14 grams of pure ethanol (.5 oz)
ABV and Proof
Proof is 2x ABV
1.5 oz of 80 proof liquor is 40% ABV
12 oz beer is ~4% ABV
5 oz wine is 9-14%
Spirits
(Hard liquor) distilled liquor that doesn’t have any added sugar and is 40% or more ABV (80 proof)

Color: clear
Odorless and tasteless
Distilled from neutral grain
Ex: Screwdriver
Gin
Dry, piney taste, juniper taste
Gin is clear, colorless, bitter and floral smell
Floral/herbal taste from infused juniper berry
-distilled from neutral grain
Ex: gimlet: gin+ rosé lime juice
Rum
Sweet tasting and sweet smelling
Distilled from fermented sugarcane byproduct (molasses)
-can be aged to enhance flavor
- white/light rum: clear, unaged, cleanest taste
- dark rum: longer aged, aromatic, rich flavor
- spiced/flav rum: clear or dark, flavor from spices or Carmel or coconut
-Cachaca: made from sugar cane juice
