Explain the process in which someone gets Staphylococcal enterotoxicosis

A

Once a protein containing food is cooked, most bacteria that compete with Staph are killed
A person then touches the food and contaminates it
If food is left out at room temperature, the staph (or infecting bacteria) releases a toxin
The toxin is ingested
A few hours later, symptoms of intoxication poisoning start to appear
You usually need about 1 million bacteria per gram to produce enough toxin to cause problems; cream pies and ham are food in which Staph. Aureus thrive because the competition bacteria are killed off when these are prepared.
Any food prepared in advance and not kept chilled are a potential source of staph. Food poisoning
The toxin can survive up to 30 mins of boiling
