Metals react with water to form metal oxide and hydrogen gas. Metal oxides are soluble in water for that, dissolve it in to form better hydroxides

Nitric acid is a strong oxidising agent and oxidise is the release to hydrogen gas to a water

Carbonate and sulphide ores are converted into oxides as a reduction of oxides makes it easier to extract metals from them
