same menu item every day. Best for facilities where patients change daily (i.e. maternal unit) or restaurants

one day use only; best for catered events, special events, holidays

Repetition of menus in designated sequence. Best for hospitals, LTC facility, school lunch program.
Benefit: simplifies purchasing; standardizes preparation procedures, constant and evenly distributed workload

Orally spoken menu

Patient calls when hungry; pt orders from a static menu.
Benefit: increased intake, decreased food waste
Commercial Operations
Sale of food is the primary activity.
(Restaurant: table d’hôte, a la carte, du jour)
Non-commercial Operations
On-site food service that provides food as a secondary activity. ( Jail, School, Hospital)
