Fun fact: Escabeche differs from Ceviche in that the protein/meat is cooked before serving cold. Comes from Arabic “El-Sikbaj” denoting use of vinegar

Fun fact: Foriana sauce originated on the Island of Ischia (off coast of Naples), traditionally tossed with pasta for Lent

Chicken breast has been brined and pounded out. Seasoned w/ S&P and then grilled.

Grilled Chicken Paillard

Fun Fact: Paillard is an older French culinary term referring to a quick-cooking, thinly sliced or pounded piece of meat. In France, it has been largely replaced by the word escalope.
Salt and pepper hangar steak cooked on the plancha.
Served with Romesco Sauce made of Confit Garlic, Tomato, and Almonds (gives rich creaminess). No bread in this romesco.
Onions are sweated, and they bring out the sweetness of the meat and garlic. Garnish TBA (amaranth or mustard)

Al dente pasta tossed in chickpeas and their braising liquid, with garlic, pepper flakes, and kale

Fun fact: The word rigatoni comes from the Italian word rigato, which means “ridged” or “lined”. Its ridges make better adhesive surfaces for sauces and grated cheese than smooth-sided pasta like ziti.
Fresh egg pasta, made in house. Pasta is tossed with duck braised in juniper, bay leaves, rosemary, orange, cinnamon and green peppercorn sauce.
The green peppercorn sauce is made from braising liquid, milk, mustard, worchestershire sc., and green peppercorn.
Pappardelle

Fun fact: The name Pappardelle derives from the verb “pappare”, to gobble up.
Moist hazelnut orange cake, served with barely roasted rosemary apples. Cake is finished with olive oil
