- Textures become firm & hard
2 methods of meat drying:
- sun drying
- solar drying
what is the ideal temperature of sun drying?
25°C to 35°C (77°F to 95°F)
this temperature range must be avoided to avoid overcooking & burning the surface of meat
40°C (104°F) to
this method of meat drying uses a controlled system with sollar collectors, dryer & ventilation to remove moisture effeciently.
solar drying
temperature in solar drying is kept under?
50-70 degree c.
this type of solar drying is exposed directly to sunlight
Direct Solar Drying
this method of solar drying used insulated box with a black surface that absorbs the sunlight & heats up the inside of the box that helps in drying the substance
