Cosmopolitan
1.5 oz Absolut Citron Vodka
.5 oz Patron Citronge
1 oz lime juice/simple syrup mix
1 oz cranberry juice
procedure: combine ingredients over ice in a pint glass. Shake 20 times with a shaker tin and strain into a frozen martini glass.
garnish: lime peel
Espresso Martini
1 oz Vanilla Infused Vodka
.5 oz Dark Creme de Cocoa
.5 oz Kahlua
1/2 shot espresso
procedure: combine ingredients over ice in a pint glass. Shake 20 times with a shaker tin and strain into a frozen martini glass rimmed with 50/50 mixture (equal parts raw sugar and chocolate shavings)
garnish: rimmed glass
Fresh Raspberry Martini
1.5 oz Reyka Vodka 1 oz (4 pumps) Monin Pure Cane Syrup .5 oz fresh lemon juice .5 oz pasteurized egg whites 6 fresh raspberries
procedure:
drop 6 raspberries into a pint glass and add pure cane syrup. muddle well. add ice to pint glass and add remaining ingredients. shake 20 times with a shaker tin and strain contents over a fine wire mesh strainer into a frozen martini glass with a half-sugared rim.
garnish: half sugar rimmed glass and a skewer of two fresh raspberries
Fresh Raspberry Martini
1.5 oz Reyka Vodka 1 oz (4 pumps) Monin Pure Cane Syrup .5 oz fresh lemon juice .5 oz pasteurized egg whites 6 fresh raspberries
procedure: drop 6 raspberries into a pint glass and add pure cane syrup. muddle well. add ice to pint glass and add remaining ingredients. shake 20 times with a shaker tin and strain contents over a fine wire mesh strainer into a frozen martini glass with a half-sugared rim.

Lemon Drop
2 oz Absolut Citron Vodka
1 oz fresh sour mix
1 lemon wedge
procedure: add ice to a pint glass. squeeze lemon wedge over ice and discard. add absolute citron and fresh sour mix. shake 20 times with a shaker tin and strain into a frozen martini glass rimmed with sugar
garnish: sugar rimmed glass and lemon peel
Fresh Pineapple Martini
1.25 oz Malibu Rum .5 oz St. Germain Elderflower Liquor .5 oz (2 pumps) house made vanilla syrup .5 oz (1/2 lemon) fresh squeezed lemon juice 2 pineapple wedges
procedure: drop 2 skinless pineapple wedges into a pint glass. add .5 oz of vanilla syrup. muddle well until all the pineapple is broken up. pack with ice and add remaining ingredients. shake 20 times and strain into a frozen martini glass.
garnish: pineapple wedge with skin on the side of the martini glass
Ocean Trust Tropic Heat Martini
1.5 oz Pineapple Infused Vodka 2 Tbsp diced mango (strained) 1 oz fresh squeezed lemon juice .5 oz (2 pumps) Spicy Mango Monin .5 oz (2 pumps) Habanero Lime Monin 1 (1/8") round slice of jalapeno
procedure: muddle diced mangoes, spicy mango monin, and habanero lime monin into a pint glass until mangoes are almost to a puree. add fresh squeezed lemon juice and pineapple infused vodka. fill pint glass with ice then shake 20 times. strain into frozen martini glass.
