>Always pick up by stem
>Fill glass with ice & water to chill the glass
>Place glass on the bar (not on the bar mat)

You flavor the ice with DRY Vermouth

1/2 oz DRY Vermouth over ice, strain, dumping DRY Vermouth in the sink. Reserve the ICE. Add 3 oz of spirit, swirl in shaker, strain into chilled glass, garnish with LEMON twist. (Side of rocks would be to put the ice from the shaker in a rocks glass and serve w/ drink)
