  2. Listen and observe: engage in convo, make eye contact, listen to voice,
  3. Body language: watch for slower responses
  4. Ask questions: see who’s driving, their mood, how they’re feeling
  5. Keep communicating: continue to talk and assess your guests throughout their visit to ensure they get their service needs

Red: Stop
-guest behaviours: intent on drinking/becoming drunk, aggressive, glassy-eyed, arguing or baiting
-they have already had too much to drink and should be stopped
Yellow: Caution
-guest behaviours: quick drinker, loud, “life of the party”
-slow or stop service
Green: relaxed, in control, happy; guest can be served. Count drinks from first drink
