What are the 3 different ways to maderize Madeira?

A

Estufagem - (most common) Stainless steel vat with coils inside warming the wine to 45-50* C (113-122*F) and holding it for at least 3 months.

Armazens de Calor - Rooms warmed by nearby tanks or steam pipes. Less direct heat, utilizing lower temperatures over a longer period of time - often up to a year.

Canteiro - (producers only do this for their best wines) Cask aged for at least 2 years in attics being exposed to gentler, natural warmth of the sun.
