Vodka - region of origin, raw material, and distillation
ANYWHERE; commonly cereal grain but can be anything; normally continuous still
Rum - region of origin, raw material, and distillation
anywhere, but traditionally Caribbean; sugarcane and molasses; can be continuous or pot
Gin - region of origin, raw material, and distillation
ANYWHERE; neutral grains
tequila - region of origin, raw material, and distillation
Jalisco, Mexico; blue agave
mezcal - region of origin, raw material, and distillation
Oaxaca, Mexico; agave of many varieties; continuous or pot still
distillation type - continuous
continuously running and faster method, creates a neutral spirit by removing flavors and impurities, used for vodkas/bourbons, and used for large scale distillation
distillation type - pot still
low alcohol liquid is brought to near boiling temp in a pot and the alcohol boils off before the water so the vapor is trapped in a condenser concentrating the alcohol
provides a slow/gentle distillation, retains flavor from the base ingredient in the final spirit, and is used for richer spirits
