Two Essential Fatty Acids
Linoleic Acids & Lonolenic Acids (ALA)
Why must we eat Lonoleic/linolenic acids from plant foods (or animals that have eaten plant foods that contain them ie fish)?
Only Plants have enzymes Delta 12 and Delta 15 desaturates required to form double bonds beyond the delta 9 position
Various functions of lipids in our body
Energy storage, Protection of internal organs, Heat insulation, Cell membranes, Steroid hormones, Bile acids, Eicosanoids, Fat soluble vitamins, lipoproteins

Locates position of the first double bond counted from methyl end ie 18:2 w-6 or 18:2 n-6

Full of hydrogens, no double bonds

Phospholipids
Structural basis of all cell and organelle membranes
Most common phospholipid in mammalian tissue
Phosphatidylcholine or lecithin - choline head group at sn-3 on glycerol backbone
Phosphatidylserine
Biological role in Apoptosis or cell death
Location of FA on phospholipids
SN-1 & SN-2
Location of hydrophilic head group on phospholipids
SN-3
Phosphatidylcholine
Found in egg yolks, soybeans - act as emulsifiers
Sphingolipids
In all cell membranes - highest in CNS
