Backbone of fat molecule
Monoglyceride
If only one fatty acid is attached
Diglyceride
If two fatty acids are attached
Fatty acids
Have even number of carbon in their chain.
16-18 carbon are the most common in food
Short chain fatty acid
Soluble in water.
Have distinctive flavors
Saturated fatty acid
No more hydrogens can be added
Unsaturated fatty acid
Room to add more hydrogen.
When carbon is double bonded.
Monounsaturated/polyunsaturated
Liquid at room temperature
Cholesterol
Naturally produced in the body.
Only produced in animal tissue
LDL (low density lipoprotein)
Less protein, more lipid.
Carries cholesterol to cells, and can leave cholesterol in the arteries
HDL ( high density lipoprotein)
More protein, less lipid.
Roams bloodstream picking up cholesterol, and removes cholesterol from arteries
