explain how the properties of triglycerides relate to their function
function - energy store
- high ratio of C-H bonds to carbon atoms in hydrocarbon chain : used in respiration to release more energy than same mass of carbohydrates
- non polar fatty acids insoluble in water : no effect on water potential of cell
describe the difference in structure between triglycerides and phospholipids
one of the fatty acids of a triglyceride substituted by a phosphate group
describe how the properties of phospholipids relate to its function
function: form a bilayer in cell membrane allowing diffusion of non polar or very small substances and restricting movement of polar molecules or larger substances
-phosphate heads are hydrophilic: attracted to water so point to water
- fatty acids are hydrophobic: repelled by water so point away
describe the test for lipids
- add ethanol shake then add water
- positive = milky white emulsion
