Difference between unsaturated and saturated fatty acids.

A

Number of C=C double bonds:
* Unsaturated have C=C double bonds, creates kink
* Saturated do not have C=C double bonds, no kink

The greater the no. of C=C double bonds, greater the number of kinks in hydrocarbon tails of molecule, weaker intermolecular interactions between fatty acid molecules, smaller amount of energy required to weaken those hydrophobic interactions, lower melting point.
