What are the three physiological roles that lipids play?
- adipose cells = tryglycerides store energy
- cellular membranes = phospholipids form a barrier between intracellular and extracellular environment
- cholesterol serves as a building block for hydrophobic steroid hormones
What is the cardinal characteristic of lipids?
hydrophobicity
What are fatty acids composed of?
long unsubstituted alkanes that end in a carboxylic acid
What does it mean for a fatty acid to be saturated? Unsaturated?
saturated = no double bonds, every carbon is covalently bonded to the maximum number of hydrogens
unsaturated = carbon carbon double bonds
What structure is formed when fatty acids interact with water?
micelle
What force causes a micelle to form?
hydrophobic interaction
What is the energy storage form of fatty acids?
triacylglycerol
triglycerides
What are triglycerides composed of?
three fatty acids esterified to a glycerol molecule
What is glycerol?
a three carbon triol that has three hydroxyl groups which can be esterified to fatty acids
What are lipases?
enzymes that hydrolyze fats
What are the two reasons triglycerides are better energy storage molecules than carbohydrates?
packing and energy content
What lipids make up the lipid bilayer?
phospholipids
What are phospholipids derived from?
diacylglycerol phosphate, DG-P
What forces stabilize the lipid bilayer?
van der Waals forces between the long tails
What determines the degree of membrane fluidity?
- length of the fatty acid tail
- degree of saturation
- amount of cholesterol
