What is Pigato?
A biotype of Vermentino
- Pigato is derived from pigau, meaning “spotted” in the local Ligurian dialect
- Pigato is typically planted in the higher hills of the western Ponente, and Vermentino is planted in the eastern Levante, which tends to be lower in elevation and closer to the coast
- Pigato wines can be creamier, waxier, and more textural than Vermentino but with the same salinity
