Where are bacteria that cause food poisoning easily spread?
Bacteria that cause food poisoning are easily spread around the kitchen and onto food via hands, clothes and equipment.
What must all food handlers make sure?
All food handlers must make sure that they have a very high standard of personal hygiene and that the kitchen is kept hygienically clean to prevent the spread of potentially harmful bacteria.
Where do bacteria exist?
Bacteria exist all over our bodies and so personal hygiene relates to keeping ourselves clean so that we don’t transfer bacteria when handling food.
Give 9 rules for personal hygiene in the kitchen?
- Tie long hair back and avoid touching it during food preparation. 2. A clean apron must be worn when preparing food as dirt containing bacteria may transfer to food while it is being prepared, causing food poisoning. 3. You must not sneeze or cough over food. You must use a clean tissue to blow your nose, throw it in the bin and then wash your hands. 4. You must not eat or drink while preparing food. Saliva from our mouths contain bacteria which will be transferred to the food via our hands and this may cause food poisoning. 5. Jewellery and nail polish must be removed before cooking. Bacteria can breed under jewellery (especially rings) and in chips in nail varnish, and then it can spread to food during food preparation. 6. When tasting food before serving, a clean spoon must be used. This will ensure that no bacteria are not spread from the mouth to the food, causing food poisoning. 7. Avoid handling food if you are unwell. 8. Wash hands thoroughly in hot, soapy water before preparing food because dirty hands can contaminate the equipment and work surfaces in your kitchen and increase the risk of food poisoning. 9. Cover any cuts on your hands with BLUE waterproof plasters. Blue plasters may be easily seen if they fall into food, and the food can then be discarded.
