A
A lower humidity allows for more water evaporation whist higher more alcohols evaporation. Brandy distillers prefer humid conditions

- Allows for different extract of different compounds
- Prevents saponification, water is added gradually

This helps the ingress of oxygen and helps remove volatile compounds quicker
