How can presuure be sensed?
A
Using eleastic pressure sensors e.g. Bourdon tubes or bellows connected to a pointer
Or for remote sensing connect to an LVDT

How would a strain gauge pressure sensor work?
A
sensing the deformation of a diaphragm under pressure giving a resistance change related to the pressure.

How do Capacitive pressure sensors work?
A
Again using a diaphragm under pressure changes the gap between the fixed plate and the diaphragm
