Willamette Valley = In Pacific NW. Cool and sunny region known for producing the burgandy varietals pinot noir and chardonnay. Wines are fermented in stainless steel, allowed to settle, blended, and bottled after short resting period
Domaine Abatucci Ajaccio ‘Frais Rouge’ 2011
Body: Very light
Region: Corsica
Varietals: 100% Schiarello
Corsica = Island where Napoleon was banished. Schiarello = 1/3 indigenous grapes of Corsica. Light-bodied, high acid, cranberry great red.
Wines from Corsica share a lot in common with Greek and Italian wines.
Island, so coastal feel’ salinity from Coastal breezes.

Food Pairings: Roast chicken, salmon, pork, duck, sausage, pate
Oak spice, more tannic, very bright red fruit, acidic, classic French representation of a pinot noir
Rhubarb and cranberry
Light red, no need to decant

Body: Med
Region: Savoie/Bugey
Varietals: 100% Mondeuse
Bugey = region N. of Savoie with a continental climate.
Domine le Roc ‘La Folle Noire d’Ambat’ 2011
Body: Med +
Region: Fronton, SW France
Varietals: 100% Negrette
Food pairings: Rich pastas and meats, with dark fruits
Most concentrated, most sun-baked fruit. LOT of sun. Woo! Holy sun! This is the one that is very dark and was amazing with the fig anglo
Everything about this wine says BLACK! Practically opaque, super saturated, punch in the face of sun
Earthy black and red fruits, violet, jasmine, prune juice, blueberries, iron an d funk
Legs move more slowly; sign of high alcohol %
Domaine de Noiré Chinon ‘Soif de Tendresse’ 2011
Body: Medium
Region: Chinon, Loire Valley
Varietals: Cab Franc
Food Pairings: Steak/lamb/duck not great with fish
Chinon = Known as the sweet spot for cab franc
Still posses cold weather acid; not overpowering
Typical tastes and smells for a cab franc = more vegetable forward: Bell pepper, blackberry, cassis, smoked shishito pepper, tomato leaf, black pepper

Body: Medium to Full
Region: Northern Rhone
Varietals: 100% Syrah
Food Pairings: Duck, chicken, steak, halibut, black bass, great with salads, v. versatile.
NOT good with oysters
More sophisticated wine; smart oldies. Nice brightness and body; not lean, but not heavy: elegant. Has power and strong tannins, but offers fineness as well.
Tastes: Black and red fruit, black pepper
Domaine Clusel-Roch Cote Rotie 2010
Body: Med/full
Region: Rhone
Varietals: Syrah and small amount of vigeney
Tiny producer in the town of Ampuis
Traditional Ampuis vines = lower yielding and give more complex aromas than modern selections.
Either 100% syrah or very small blend of vigenary (white grape). This batch has 1-2% vigeney
Cote Rote = “Roasted Slope.” Very aromatic

Region: SW, French Pays Basque
Varietals: 80% Tannat, 20% Cab Franc
Food: Steak!
Very tannic wine; what you pour for someone who wants a “different” full red
Hints of olives and brine, green peppers, very ripe and rich blackberry, sweet red pepper
12 months aged in 3 year barrels. Vineyard on foothills of the Pyrenese
More spicy, nutty.
Tannat = most heart-healthy grape
Chateau la Fleur Plaisance
Body: Full; Decant!
Region: Bordeaux
Varietals: 80% Merlot, 20% cab sauv
Food: Red meat, lamb, sausage, hearty pastas, strong cheeses
Rich and vibrant, offering aromas of dark fruit and hints of cherries. On the palate shows excellent balance with silky tannins, and hints of licorice on the finish.
“Whole milk” wine
Classic bordeaux: Minerality and earth, with plum flavors instead of berries. Right bank.

Region: Bandol “Bro wine”
Varietals: 90% Mourvedre, 10% Grenache
Food pairings: REALLY a steak wine
Most tannins of reds by the glass
Wine built for red meat; hard to drink without fat to absorb the tannins.
Sell to dude who wants the biggest wine we have by the glass. Also happens to be most $$$
Little bit of gaminess (smoked meat taste)
Most alcoholic. Dark black fruit, earth, leather, ripe blackberries, cassis, plum
Great for new world wine drinkers
Chateau Saint-Cyrgues Costieeres de Nimes 2012
Body: Medium +
Varietals: Grenache, Syrah, and Mourvedre
Dry, ripe to over-ripe fruit, spicy, astringent, no sugar. Earthy, dark fruit, Non oak.
Costiéres de Nimes = area that has been recently assigned to the Southern Rhone
