Nutrients
chemical compunds found in foods; fats, carbohydrates, protein, minerals, vitamins
Balanced diet
Diet which includes the correct amount of nutrients for an individuals needs
Malnutrition
Lack of food or particular nutrient in the diet, or too much of the wrong kinds of foods, eg. fat - obesity
Dietary Diary
Record of all the food & drink intake of a person over a given time
Protein
For growth and repair of body cells, tissues and muscels.
Amino Acids
Chemicals which make up protein molecules
Indespensable amino acids
Essential proteins we cannot live without
Novel protein
Growth from micro - organism which produce mycpoteins
Saturated fatty acids
from animal sources, have no double bonds becuase all of the carbon atoms are saturated with hydrogen
Unsaturated fatty acids
From vegetable sources - have two or more double bonds
NSP
Fibre - indigestable fibrous part of plants. Essential for digestion and elimation of waste.
Water soluble vitamins
Dissolve in water, should be eaten often. they are B and C
Fat soluble vitmains
A, D, E and K. These are stored in the liver
Trace elements
Minerals needed in very small amount in the diet.

Estimated average requirment of a nutrient for any group of people
