why 620ml? Because that’s roughly how much wine remains from 1 litre barrel after the 6+ years of evaporation during barrel aging

Vin Jaune is only 100% Savagnin
Vin de Paille has no Pinot Noir

the first AOP, consists of 11 villages, only Pupillin allowed to append its name

What is Cremant du Jura AOP?
TRADITIONAL METHOD
-min 70% combined Chardonnay, Pinot Noir & Trousseau (Blanc)
-min 50% combined Pinot Noir, Pinot Gris, Trousseau & Poulsard (Rosé)

What is the min aging for Cremant du Jura AOP?
min 12 months (9 months on lees)
What is Macvin du Jura AOP?
Fortified sweet wines (white / red / rosé)
All 5 grapes are permitted
It is a blend of unfermented grape juice and marc du jura (local grape spirit), spirit is added before fermentation, result wine is sweet and no fermentation at all

What is marc du jura?
a local grape spirit to fortify Macvin du Jura AOP, it is 52% abv and must aged min 14 months before added in
How is Vin Jaune made?
made from only Savagnin, the wine is aged in wooden casks and never topped up for min 6 years and 3 months. The natural layer of yeast (voile) forms on surface, allowing slow oxidative aging.
It then bottled into Clavelin
Similar to Sherry but is not fortified
What is Vin de Paille?
natural sweet wines, Paille = Straw
Dessert wine made by drying grapes
Usually a blend of grapes but can be single-varietal (Pinot Noir not permitted)
How is Vin de Paille made?
•grapes are hand-harvested
•laid out to dry for 6+ weeks sometimes up to 3 months
•grapes are gently pressed, yielding very little juice
•juice is fermented slowly, often took several months
•wine is aged in oak min 18 months
•typically around 14% abv
with the labor intensive, time consumption, low yield juice the result wine is expensive and precious (often sold in small bottle 375ml)
How to justify if a Jura wine is oxidative or not?
Wines sometimes labelled as ouillé meaning “topped up” hence is non-oxidative style
Voile = yeast veil (oxidative style)
