Animals are used because a researcher can expose harm to them, that you cannot replicate on humans. Also animals used have high breeding rates so they have readily available participants

SELYE - put rats under a series of stressors - killed a lot of rats/exposed them to stress (unethical) however easy to replicate

G&G (ape washoe) - controlled enviroment, taken away from other apes, exposed to unethical situations

Because ethical issues with human research often restricts the development of psychological research. There is enough of a similarity between humans and animals to extrapolate findings to humans
