Differences between water soluble and fat soluble vitamins
A
- Water soluble vitamins are hydrophilic while fat soluble are hydrophobic
- Water soluble vitamins are absorbed directly into the blood stream while fat soluble are absorbed into the lymphatic system
- Water soluble vitamins cannot be stored while fat soluble vitamins can be stored for future use.
- Water soluble vitamins can be easily destroyed by heating while fat soluble vitamins are less fragile
