Scotch
(whisky made in Scotland) usually malted barley, sometimes has wheat or rye, dried over peat-fueled fire, with smoke coming in contact with drying malt
Irish
(whiskey made in Ireland) usually barley, sometimes rye, dried in closed kiln fired by coal or gas
Bourbon
(whiskey) 51-80% corn, aged in oak barrels (above 80% must be labeled as corn whiskey)
Rye
(whiskey) at least 51% rye
Tennessee
(whiskey) same as bourbon but filtered through sugar maple charcoal before barreled
Canadian
(whiskey) less regulation, usually a blend
Vodka
Made from grain or potatoes, distilled 3+ times, filtered through charcoal, practically tasteless/odorless, can have different textures: oily/silky vs clean/medicinal
Gin
mash of cereal grain, flavored with botanicals (most prominent is juniper), London dry is flavored during second or third distillation with botanical vapors
Tequila
made from blue agave plant in Mexico (mixto is at least 51% blue agave) (Mezcal is heated with wood charcoal, gaining the smoke flavor during the cabling process)
Rum
made from molasses, sugarcane juice, or concentrated syrup from pressed sugarcane, there are many different rums from around the world, mostly South American regions, AOC Martinique rhum agricole vieux is aged rum for at least 3 years
Brandy
Distilled from wine or other fermented fruit juice, name is derived from Dutch word for burned wine, includes Brandy’s from French regions of Armagnac, Cognac, and Calvados (apple brandy)
Liqueur
flavored spirit typically ≤40%
Angostura Bitters
aromatic bitters originally developed for medicinal purposes distilled from botanicals
Peychaud’s Bitters
spicier bitters from New Orleans
Orange Bitters
distilled from Seville sour orange peels
Simple Syrup
sugar dissolved into water, common substitute for raw sugar
Grenadine
pomegranate juice and sugar, french word for pomegranate
Absinthe
flavored with fennel, anise, and wormwood
