Lobster Ravioli
Lobster, ravioli, chopped and mixed with cream cheese, Parmesan, chives, basil, lemon zest, touch of salt. Then stuffed into handmade raviolis. Served over a lobster compound butter with a fresh cooked claw on top. Finished with scallion oil (spring onion) and Calabrian chili foam (Calabrian chilies, (Italian chili peppers- spicy,smoky) black peppercorns, leaves, garlic, onion. Cooked down strain and mixed with an a modifier and whipped into foam).
Tasso E Pepe
Our pasta is made in house with eggs, many additional yolks, flour, and olive oil. It’s hand cut into linguine, Parmesan, water, black pepper. Topped with chop Tasso. This dish is designed to be added upon, if necessary. it pairs well with shrimp, lobster, scallops, or vegetables.
The curry is made by cooking yellow, onions, bell peppers, habanero, peppers, chili, lime, shallow, garlic, ginger, and lemongrass down into coconut milk, vegetable stock, star, cinnamon and clove, and is slow cooked and reduced down until the desired consistency is reached.

Fruits de Mer Tagliatelli
Gulf shrimp, jumbo lump crabmeat, scallops, mussels, Courtbouilion.
Our pasta is made in-house with eggs, many additional yolks, flour, and olive oil. It is hand, cut and dried into tagliatelle. Gulf lump crab is tossed in a Parmesan and Meyer lemon cream sauce. Meyer lemon is zest a top of pasta and a quenelle of Choupique Caviar.
Choupique caviar is another name for Bowfin caviar, which is a type of caviar made from the ro of the bowfin fish, a native fish of the a southern U.S.
A charred lemon is served on the side.
