A

…when we start a wait even though we are not full. We do this to allow the kitchen or floor staff to catch up with our currently seated guests. The only time a false wait is started is when the MOD says to.

How do you put a guest back into the phone system to transfer calls to our voicemail?

A

DO NOT PUT THEM ON HOLD. Keep the guest on the line, tell them the extension # of who they are trying to reach. Then hit “cnf/trn# key then hit 18 and hang up.

What is the importance of seating sections on a rotation?

A

We rotate the seating of all sections to ensure that all servers have an equal number of tables sat. This allows the server to give the best service possible. Double or triple seating a server is somewhat inevitable but the host should do this only if a guest requests a particular table or a manager tells them to. *We also only split table 47 with a managers approval.

List the 1st cut closing duties for the hosts:

A

Sort/wipe special menus and stock kid and regular menus
Check/stock bathrooms (sweep and take out trash if needed)
Clean entry way (ground) and wipe all door windows
Organize drawer at host stand (recycle menus)
Stock paper rolls and to-go bags.

Check all 1st cut side work (if they missed something do it.)
Set bank at $100.00/put cash, credit card slips and checks in bag
Hand $ to your MOD and check out

Only can call 1/2 hour before they plan on arriving.
Give quote time - once they arrive.
