Origin of the name Chablis
Thought to have originated from 2 Celtic words
“Cab” meaning house and “leya” meaning near the woods
Roman times and Chablis
4 major villages built in Roman times created town
Vines pulled in 81-96 ad but replanted in 276-282
Monks and Chablis
In 867 Benedictine monks fleeing the Vikings settled in Chablis (Charles the bald gave them the village) however it was the Cistercian monks in 1100s that developed the region
Hard times for Chablis
Phylloxera at the end of the 19th century, followed by loss of so many young men in 1st and 2nd WW
In 1955 Chablis was only 550 ha of vines
1957 total loss of crop due to frost
Not till 70s did it start to look better for Chablis
First use of Chaufferettes

When AOC regs put in place limiting yields and disallowing blending of other grapes
Also trademarked the name Chablis
