Cumin

Ingredient in chili powder, curry powder, German cooks add to pork and sauerkraut, Dutch add to cheese
Dill
Herb • fresh, dried, or seeds • aromatic, flavour like caraway but milder and sweeter
Dill used for
Used for dill pickles, seeds in meats, sauces, salads, dill weed in salads, sandwiches, uncooked mixtures
Mint
Herb • fresh leaves or dried flakes • strong and sweet flavour with a cool aftertaste
Mint used for
Peppermint is most common variety, popular flavour for candies, frozen desserts, also used for fruits, peas, carrots
Oregano
Herb • fresh, dried leaves, or ground • more pungent than marjoram, reminiscent of thyme
Oregano used for
Used in pizza, meat dishes, cheese and egg dishes, on vegetables, in chili powder and Italian seasoning
Rosemary
Herb • fresh or whole leaves • refreshing pine, resinous, pungent flavour
Rosemary used for
Used in chicken dishes, many vegetables, enhances flavour of citrus fruits
Thyme
Herb • fresh, dried whole or ground • strong, pleasant, pungent clove flavour
Thyme used for
Used in clam chowder, seafood dishes, poultry stuffing, blended with butter over vegetables
Cinnamon
Spice • whole sticks or ground • warm, spicy sweet flavour

Used in cakes, breads, cookies, and other desserts
Nutmeg
Spice • whole or ground • spicy, pleasant flavour
Nutmeg used in
Seed of nutmeg used in baked goods, puddings, sauces, vegetables, in spice blends for processed meats, mixed with butter for vegetables
Paprika
Spice • ground • sweet, mild, or pungent flavour
Paprika used for
A garnish spice, gives nice appearance to many dishes, used in production of processed meats, salad dressings, other prepared foods
