Heat Transfer Flashcards
What is heat transfer?
Heat transfer describes the flow of heat (thermal energy) due to the temperature differences and the subsequent temperature distribution and changes.
What is convection?
Convection is the circular motion hat happens when warmer air or liquid (which has faster moving molecules, making it less dense) rises while the colder air drops down.
Examples - frying, steaming
What is conduction?
Conduction is when something hot touches something cooling thing that are heated up.
Examples - blanching, boiling
What is radiation?
Radiation is where the heat and light wave (infra red waves) strike and penetrate the your food. There is no direct contact between the heat source and the cooking food.
Examples - grilling, barbecuing
What are some cooking methods?
Grilling Boiling Barbecuing Roasting Deep fat frying Steaming Blanching
