A

How should you greet a table?

A

Example greeting (if they haven’t dined with us before): Hi there, my name is Olivia I’ll be taking care of us tonight, have we been to Harry and Izzy’s before? Alright, welcome in. I’d like to tell you a few quick things about our restaurant. We are the sister restaurant of St. Elmo Steak house right next door. They’ve been around since 1902 and we have been around since 2007. We are best known for our signature world famous shrimp cocktail highlighted in the top in red. Ask the guest if they would like to hear our specials, and offer drinks and appetizers right away.

What should a table look like when a guest leaves?

A

Only cups that are being used should be left on the table prior to guest departure. No plates, napkins, silverware, bread baskets should be left on the table.

A

Always with a dessert spoon or a fork. Ask the guest if they would like extra plates to share their dessert.

A

Seat one should ALWAYS be to the left when delivering food. Serve from the right and clear from the right. never put your elbow in the guest’s face. (name each plate when placed).

A

Bread should be served with the soup or salad. It should be either when the server takes menus off the table, or when the guest requests it. (upon request at lunch, not automatic).

A

Inform the guest of alternative options, offer a gluten free menu (upon request). Fill out a green allergy ticket after taking the order, inform the MOD, and have them discuss the order with the guest.

What should you do when a recook/upcook is needed?

A

Inform the MOD as soon as possible. If an upcook is needed, bring the item to expo, fill out a ticket, and a recook usually is not necessary. With a recook, throw out the old item, the MOD will adjust the check, and offer the guest something while they wait for the new dish to be made. (write a ticket with a recook as well).

How should you handle the wine & martini glasses?

A

Always handle them by the stem, do not touch the bowl.

How should you handle a coffee mug?

A

By the handle only.

A

By the bottom of the glass, never at the top.

How should you serve beverages?

A

Always on a clean tray, serve from the right when possible with your right hand, ask “may i pour?” if serving a bottled beer. Serve a glass with a second beer. pour iced tea and water without lifting the glass unless you feel it may splash the guest.

What are the garnish standards for iced tea, cocktails and sparkling water?

A

Iced Tea: should be resting on the side of the glass, a sugar caddy should be served automatically.
Cocktails: the standard citrus should be on a pick.
Sparkling Water: serve with a wine glass or a cold pint glass if the guest requests it. (if lemon or lime is requested serve on a b&b plate).

A

Coke products: Coke, Diet Coke, Minute Maid Light Lemonade, Barq’s Root Beer, Dr Pepper.

A

Cranberry, pineapple, orange juice and tomato juice. (no free refills with these).

What are the straw service standards for soft drinks, iced tea, to go drinks/kids drinks, and alcohol?

A

Soft drinks: a straw is provided upon request.
Iced tea: a straw is provided upon request. an iced teaspoon should be provided for stirring.
Kids/to go drinks: When served in a to go cup a straw should always be provided.
Alcohol: straw is provided upon request (includes short cocktail straws) straws should be used in a pint or bev glasses.
