Describe the characteristics of the Sangiovese grape, and where it is grown

A
  • late to ripen (needs warm climate)
  • high acid
  • high tannins
  • aroma: red cherries, plums and dried herbs
  • aged in oak (usually): softens tanins and adds spice
  • aged in bottle: meaty and gamey aromas

Describe the style, grapes and location Chianti DOCG

A

Sangiovese dominant, french and italian varieties allowed for blending

The wine is made from the wider Chianti region, and high quality wines can be made from a particular subzone (Chianti Colli Senesi or Chianti Rufina)

A

Vineyards at are higher altitudes than Chianti DOCG, slowing ripening for Sangiovese:

  • Higher acid
  • More herbal aromas
